Start by clicking the Conversations tab.

A summary of all your previous chats are listed chronologically under History, found next to your Online Visitors. By clicking the clock symbol, you'll change the view from Online visitors to your chat history, together with the timestamps and the labels given to the chats.

Please note that the chats only appear after they have ended. A certain delay may also occur, but the chata are listed as soon as the client considers them completed.
